Yoga, Kale, & Middle Eastern Fiction

After what seemed to be a short weekend, Monday crept in on my Sunday. Sigh. But an enjoyable Monday nonetheless. After spending time with my grandmother in Montgomery shopping, all hale the non ATL venue, my husband and I brought mashed potatoes to their most healthy state. Non è possibile, ma…
but with kale, all things are possible.
Kale Mashed Potatoes

Sauté a small onion in olive oil until translucent. Add rinsed & chopped kale (amount depends on preference, I used about 3/4 of a bunch). Pour in 1/2 cup of veggie broth. Simmer down until they look like this an add chopped garlic:

Add kale to 5 mashed russet potatoes. Salt/pepper/butter to taste. If you are going all out add some fresh parmigiana reggiano. Buon appetito!

Post dinner, I enjoyed an hour of Yoga to relax, a break from the usual Zumba or spin class. You know you do too much Zumba when you can hear a rap/Latino song without wanting to bust out in dance moves. Moving on…

If you like historical fiction, Joel Rosenberg is a great suspenseful writer. He’s actually a Christian author, but he’s well versed and lived in the middle east. I’m about halfway through The Twelfth Imam, good read.

Just a side note, I’ve applied to graduate school. Say a prayer. My GRE scores didn’t get there in time, maybe someone over on admissions is feeling friendly.
